Hump Day Recipe ~ French Coffee Cake


Need a little something indulgent to get you through the rest of the week? I do! How about a nice slice of sour cream chocolate chip coffee cake?

This recipe is so easy, and you probably have everything in your house already (the only thing I didn't have was the sour cream). Grab a cup of coffee and dig in.

French Coffee Cake

Filling/Topping
1/2 cup firmly packed light brown sugar
2 tablespoons all-purpose flour
1/2 cup chopped walnuts (these are optional at our house)
1 cup chocolate chips (I use semi sweet)
1 teaspoon ground cinnamon

Cake
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
8 tablespoons (1 stick) butter, softened
1 cup sugar
2 eggs
1 cup (8 ounces) sour cream
1 teaspoon vanilla extract

Preheat oven to 350 degrees. Grease and flour a 9-inch round pan or springform pan. Combine all the filling/topping ingredients, mix well and set aside. In a medium-sized blow, mix together the flour, baking powder and soda, and salt. In a large bowl, cream the butter and sugar, then beat in the eggs. Beat in the sour cream and vanilla until creamy. Beat in the dry ingredients. Pour half the batter in to prepared pan. Sprinkle half the filling/topping mixture over it. Pour in the remaining cake mixture, and top with remaining filling/toping mixture. Bake for 50 to 60 minutes, until a toothpick inserted in the cake comes out clean. Let cool in pan for 10 minutes on a wire rack before removing.

  5. I know my kids do, Mallory! My youngest was afraid to eat it because she thought there was coffee in it. It is kind of weird to name it after the drink you have with it.
